60 ml 2 oz Light Rum
120 ml 4 oz Pineapple juice
60 ml 2 oz Coconut cream
10 ml Lime Juice Optional
3 Pineapple leaves

1 Prepare

Get your pineapple wedge (and cut your lime ready for juicing)

2 Ice

Fill your glass with crushed ice and shaker with cubed ice

3 Add ingredients

Pour all the ingredients into your shaker (or blender)

4 Shake 12 sec

Close the shaker and shake hard for 12 seconds

5 Strain

Take off the small top off the shaker and strain out the mix into your iced glass.

6 Stir

Stir gently in 3d motion

7 More ice

Top off with more crushed ice

8 Garnish and serve

Garnish with your pineapple leaves and add a straw

What could be more tropical than the exotic mix of Rum, pineapple and coconut?? Created in the middle of the 20th Century, it has been enjoyed on holidays and pool sides ever since.   Bartender Tip: If you can hold of it, the original coconut cream used was Coco Lopez!
